These Crepes and Cheesy Eggs recipes are recipes that are cherished in our family because we love spending that preparation time together. Once you discover how simple and enjoyable, not to mention how versatile they can be, crepes may well become a regular favorite for any family meal.

This is the absolute best crepe recipe that we have discovered, and it has been our go-to breakfast recipe for ever since we discovered it. It is perfect for weekends when the whole family gets to sit down and have breakfast together. These crepes fold and roll well, and as a plus, can be stored in the freezer for weeks or in the refrigerator for several days, though we’ve never had any lasted through the weekend.

What you do normally is you prepare the batter and use it right away, but for more tender crepes, (top Secret) it is best to let the prepared batter rest for a few hours. We have found that refrigerating the batter overnight yields the best results. We have never made just one batch; instead, we have always doubled it. When cooking for larger groups, friends as well as family, we even prepare multiple double batches. With the years of experience that we have with these crepes, we have determined that double batches work best for us; note that making triple or larger batches does not seem to provide the same balance… results.

  • Just 1 cup all-purpose flour
  • 2 Large eggs
  • Only 1/2 cup milk
  • And 1/2 cup water
  • Just 1/4 teaspoon salt
  • Only 2 Tablespoons Butter Melted.

Time to Blend!

In order to achieve a smooth mixture without lumps, I use a blender or immersion blender (as demonstrated in the video above). Add all the ingredients in this specified order and blend until you have a smooth mixture. Do make sure to use a spatula to scrape down the sides of the bowl or blender to fully incorporate the flour. Remember, the mixture should be smooth, but not overly aerated.

Consistency is key here; the batter should resemble the thickness of heavy cream. Keep in mind your elevation it will help you have an understanding of the flour’s behavior. Generally, it is also advisable to level the flour in measuring cups using a knife or a straight edge.

We must also suggest opting for a Crepe Maker instead of a traditional frying pan. You can absolutely find a similar one to the one we use by visiting the link provided. It is a cordless Crepe Maker, and it includes a batter dish and a spatula, this makes it a great value and a wonderful gift option. Don’t hesitate to share the recipe mentioned above; we came across it many years ago and still have not found a better one.

This Recipe will be a definite success, and it incorporates some wonderful nuances that are showcased in the video. The ingredients are also very straightforward.

Mixing Time!

First Break the eggs into your mixing bowl and incorporate the water to balance the mixture—remember use 1 ounce of water for every 4 eggs. This is how you get the fluffiness, giving the crepes a light, airy texture. Next, mix the eggs and water until smooth. We usually blend them using an immersion blender, which you can find here. They are convenient, easy to clean and store. An immersion Blender is Highly recommended!

Next, turn the burner on to a medium-high heat and make any necessary adjustments based on your stove. We are familiar with ours and know the optimal setting for this task. Follow these steps in order.

  1. First, take out the pan and apply Pam Cooking Spray (or a potentially healthier alternative). Ensure it is evenly coated, especially when using a high-quality non-stick pan, as the outcome differs when this step is skipped.
  2. Then you place the pan back on the heat and add pepper according to your preference, allow the warming pan to heat the pepper.
  3. Next Add the salt according to your preference. We don’t use much at this point since the cheese is already salty. However, feel free to adjust to your liking.
  4. In about 10 to 20 seconds, add some cheese and allow it to start melting.
  5. Once it starts to melt, is not completely melted but still melting, pour the blended eggs into the pan
  6. Next, you will stir and incorporate in the additional cheese while it is cooking to achieve the ideal consistency. We prefer it to be moist, not overly runny or overcooked.
  7. Also, make sure to reserve some cheese for the final touch! (To melt on top). This will not only enhance the presentation, but it also adds a delightful gooeyness when it is sliced and rolled into the flat crepe.

It is ideal to roll the Cheesy Eggs into the Crepes when the Cheesy Eggs are fresh and hot!

Once the dish is prepared, it can be added to a crepe and rolled up for a delightful meal. It is a fantastic savory crepe dish that is very simple to make and is sure to please. Even those who have said they don’t like eggs will find it a game changer for their taste buds. If you have a child or loved one who is particular about their eggs, just serve them a crepe without revealing that it contains eggs. You will be amazed at how much they will enjoy this dish. They might just ask for it over and over again!

Keep in mind that you can add so many things to crepes!

  • There are the Syrups! Maple! Caramel! Chocolate! Blackberry! Strawberry! I’m getting excited just typing this out!
  • Spreads, Jams and Jellies! My pantry is full of them. This is a great time to bring them out!
  • Bananas, one option the kids will love… Bananas and Nutella.
  • Fruit, Fruit Salad. My smallest loves this one. He is and a half, ever since last Thanksgiving he absolutely can’t get enough of my fruit salad! (Another recipe for another day.)
  • Sliced Cheese and Meats. You can never have enough cheese.
  • Cream Cheese… just opens so many doors.
  • This list can go on… Nuts!
